Princess Sofia party



My little gal celebrates her sweet five years old.. I always wanted to bake my kids a birthday cake but just lack of courage. As if I happen to fail, I might not be able to find them a replacement cartoon cake that they requested. But after encouragement from my baking friend, I decided to bake my gal one!! And I'm very happy with my first birthday cake for her.



Recipe source:  I use the buttercake & buttercream recipe from my friend

 
Buttercake Recipe:
250g Salted Butter
250g Castor Sugar
4 Eggs
350g Plain Flour
2 Tsp Double Action Baking Powder
150ml Cold Milk
Method:
Sift plain flour and baking flour together and set aside
Cream butter and sugar till light & fluffy
Mix in beaten eggs gradually
Fold in dry ingredients
Fold in milk
I divided it into 4 layers (270g each), one without adding any color to it and the rest of the three add purple color to it, add slightly more for each batter so that you can have a even lighter to darker purple. Gently fold in the color.
Bake each layer in 6inch pan in preheated over at 160C for around 20mins and until a skewer comes out clean.

Buttercream Recipe:
250g Butter
125g Shifted Icing Sugar
1Tsp Vanilla Essence
 
Method:
Cream till light & fluffy and it is ready to use. I multiply the recipe by two times so that I got enough cream to apply and pipe the whole cake. I layer each cake with buttercream without coloring and divided the rest into three and added purple colors. I covered the cake with the lightest purple color. I am using Wilton 1M for the piping

I have been planning this birthday one month in advanced, as I always tend to forget things easily and often need to make 2-3trips while preparing and cooking. This round I make a record of myself staying in the kitchen throughout the process. Haha..

The Dry Version of Laska

I always hope to try new dishes in my party. So I have searching for this dry version of laksa and come across Bakericious version. The laksa she presented look so yummy and I know I have to try it! I triple up her recipe, only to find out it is going to be a lot. So I use about 2.5Kg of thick bee hoon. I have difficulties frying this laska because it is really too much. But luckily the taste still acceptable..
