Princess Sofia party



My little gal celebrates her sweet five years old.. I always wanted to bake my kids a birthday cake but just lack of courage. As if I happen to fail, I might not be able to find them a replacement cartoon cake that they requested. But after encouragement from my baking friend, I decided to bake my gal one!! And I'm very happy with my first birthday cake for her.



Recipe source:  I use the buttercake & buttercream recipe from my friend

 
Buttercake Recipe:
250g Salted Butter
250g Castor Sugar
4 Eggs
350g Plain Flour
2 Tsp Double Action Baking Powder
150ml Cold Milk
Method:
Sift plain flour and baking flour together and set aside
Cream butter and sugar till light & fluffy
Mix in beaten eggs gradually
Fold in dry ingredients
Fold in milk
I divided it into 4 layers (270g each), one without adding any color to it and the rest of the three add purple color to it, add slightly more for each batter so that you can have a even lighter to darker purple. Gently fold in the color.
Bake each layer in 6inch pan in preheated over at 160C for around 20mins and until a skewer comes out clean.

Buttercream Recipe:
250g Butter
125g Shifted Icing Sugar
1Tsp Vanilla Essence
 
Method:
Cream till light & fluffy and it is ready to use. I multiply the recipe by two times so that I got enough cream to apply and pipe the whole cake. I layer each cake with buttercream without coloring and divided the rest into three and added purple colors. I covered the cake with the lightest purple color. I am using Wilton 1M for the piping

I have been planning this birthday one month in advanced, as I always tend to forget things easily and often need to make 2-3trips while preparing and cooking. This round I make a record of myself staying in the kitchen throughout the process. Haha..

The Dry Version of Laska

I always hope to try new dishes in my party. So I have searching for this dry version of laksa and come across Bakericious version. The laksa she presented look so yummy and I know I have to try it! I triple up her recipe, only to find out it is going to be a lot. So I use about 2.5Kg of thick bee hoon. I have difficulties frying this laska because it is really too much. But luckily the taste still acceptable..

My boy turns 7

Nasi Lemak mini buffet


 
Ever since my boy goes to primary one, my life went to another stage.. homework, spelling, tests, a lot of stress & tiredness is all I left with.. and so for the whole year I  become less frequent in cooking and baking. But I still look forward to cook for their birthday party. I'm those anxiety type, so I started to stress about not finishing cooking before the guest come, as I foresee my oily kitchen. and this time I'm doing a birthday lunch..

Luncheon meat, long bean, ikan bilis, red eggs, omelette, nuggets, sotong ball, fish fillet and hotdogs.
 


 The leading star of the day.. Nasi Lemak

 Recipe source from FB group:

*6 cups rice
*500ml coconut milk
*1 tsp salt (To enhance the taste of the coconut milk)
*Pandan juice ( I just blend one bunch of Pandan leaves with some water and squeeze the juice out)
*1 knob of Pandan leaves
*Then fill up water to water level for 6cups of rice and cook
*Stir once while cooking in rice cooker

Golden Chicken Wing

 This chicken wings I marinate based on estimation and.. the taste is nice but is not crispy enough (will definitely try again). The ingredients I use are:
* Salt
* Lea & Perrins
* Chicken powder
* Sesame oil
* Turmeric powder

I marinate the chicken wings overnight.

Lastly Coat with tapioca flour and deep fry till golden brown.

  Broken Glass Jelly recipe adapted from Nasi lemak lover but I use coconut milk instead.

Fried Noodles

The fried noodles recipe is an easy one also based on estimation:

*Yellow noodles
*Dark sweet sauce
*Light soya sauce
*Garlic
*Little water

*Fry garlic till fragrance, then add noodles, little water and stir fry for 2-3mins then add dark sweet sauce & light soya sauce and fry for another 2-3mins.

I am so happy when I found this cake at Angie choice website..as I prefer cream cakes and not fondant cake.. and I really love Angie choice cake.. will never fail to satisfied one. All my guest like it too!

Egg Cupcakes

This is my favourite egg cupcake recipe, got this recipe from someone in FB.


Egg Cupcakes

(A) 6 Egg White, 130g Icing Sugar
(B) 6 Egg Yolk, 2 Whole Egg, 100g Corn Oil, 130g Self Raising Flour, 1tsp Vanilla Essence

Method:

1) Beat ingredients (B) till well mixed and set aside
2) Whisk ingredients (A) till near stiff peak and fold into step (1) in three batches.
3) Baked in preheated oven at 160C for 35mins

Chocolate Chips Cookies

 
This is my first post, baked this together with my boy to encourage him for his test today. Got this recipe from a baking group from FB. I find a little sweet, will cut down the sugar for next round.

Chocolate Chips Cookies

(A) Caster Sugar 50g
       Brown Sugar 150g
       Salt  1/4tsp
       Butter 120g
       Shortening 30g


(B)  Egg 1
       Vanilla Essence 1/2tsp

(C) Plain Flour 220g
       Baking Powder 1/2tsp
       Baking Soda 1/2tsp

(D) Chocolate Chips 250g

Method:
(1) Beat A until light & fluffy then add (B) and mix till creamy
(2) Add (C) and mix well
(3) Add (D) and mix well
(4) Scope on baking tray and bake in preheated oven at 170C for 15mins.
